My Summer in Food: Lazy Cooking

As you probably know, making/cooking your own food in college is pretty limited to whatever you can stick in the microwave or whatever contraband portable cookers you might have snuck in to your room (ie: rice cookers). So, this summer I decided to make it my goal to not be lazy and make the best of being able to cook at home. In the end, I sort of found a compromise between the two, bringing to life something I like to call "Lazy Cooking".
This post is organized by Food Category as well as Effort used. As I'm sure you'll notice, effort decreases as you continue through the post. ;P Enjoy!
Comfort Food
Vince came up for a visit so we decided to try really hard (and really unhealthy) : Roasted drumsticks, Chili Cheese Fries, and a half-hearted salad.

Open-Faced/ Deconstructed Sandwiches (aka lazy sandwich)
I love cucumber and was really liking the idea of light cucumber tea sandwiches, so here's the lazy, un-dainty, open faced version
Egg salad/Cucumber Sandwich; Brisling& Coriander on Toast
As you can see, I was on a hot water/lemon phase. My parents used to make me drink this every morning in High School because of the detoxifying health benefits but I stopped in college because.... no time.
I decided to try and get back on that but I realized that I started getting heart burn because of the acidity so I had to stop.
French Bread and a sad Bruschetta (sparkling lemon water and mint); Bagel, eggs, and ham because we didn't have anything else...

Irish Apple Crumb Cake; Heart shaped Pancakes because why the hell not?
